Executive Chef de Cuisine Carlos Bojorquez is a seasoned professional with nearly 20 years of experience at several of Southern California's finest hotels, ranging from the St. Regis to The Westin Bonaventure. Originally from El Salvador, Chef Carlos moved to the United States at the age of 16. Starting as a dishwasher all the way to his current role as executive chef de cuisine, Chef Bojorquez' story is one of inspiring success in climbing the ranks of prominent hotel kitchens. Over the years, he's developed extensive knowledge on sourcing Southern California's finest local produce and leading expertly organized kitchens. He now leads EST. Prime Steakhouse's culinary team in perfecting the execution of top-quality cuts of meat and locally sourced seafood. Here, guests can find odes of his heritage peeking through menu items such as his signature, mouthwatering Salvadorian Chiletepe Chimmichuri sauce, atop any premium cut of steak.

A Certified Sommelier in the Court of Master Sommeliers and Certified Wine Professional in WSET, Sierrah Gonzalez leads the wine program at EST. Prime Steakhouse. A Los Angeles native, Sierrah works alongside our expert chefs and team to create a memorable wine experience for both wine enthusiasts and novices.

EST. Prime Steakhouse is led by our charismatic Manager Lily Jones. Lily's unique attention to cultivating and enhancing your time at EST. Prime Steakhouse will elevate your dinner into a dining experience.
 
Lily has worked her way up through the hotel ranks over the last 20 years. She started her career as a server assistant at Hyatt Regency Valencia Hotel at the age of 17 and has been immersed in hospitality since. After earning her business management degree, Lily worked for many reputable hotels around Los Angeles including Le Meridien Delfina Santa Monica. She moved to San Diego in 2015 to open a Four Points by Sheraton. She later joined the prolific Cohn Restaurant Group in San Diego where she perfected her management skills. Next, she joined Hard Rock Hotel as an Outlet General Manager. Lily has returned to Los Angeles to helm EST. as our manager.
